WVPT Cooks with Tassie Pippert – A Viewer Favorite (and a surprise with this posting)

Now here is the surprise!  Tassie has provided a great recipe for you today:

Cassola Salad (Acini dePepe Salad) This is a side-dish; it’s not really a dessert.

 

1 cup sugar

2 tsp. flour

½ tsp. salt

1 ¾ cup pineapple juice (use juice from canned pineapple)

2 eggs, beaten

1 Tblsp. lemon juice

1 -20 oz. can crushed pineapple, drained (use juice for above)

2 -20 oz. cans pineapple chunks, drained (use juice for above)

1 -12 oz. carton Cool Whip

3 -11 oz. cans mandarin orange slice.

1 lb. acini de Pepe pasta

 

Combine sugar, flour, and salt in saucepan.

Gradually stir in pineapple juice and beaten eggs.

Cook over medium heat, stirring until thickened.

Add lemon juice.

Cool to room temperature.

While egg mixture is cooling, cook and drain the acini de Pepe.

Combine egg mixture with acini de pepe, mixing lightly but thoroughly.

Refrigerate overnight or for many hours in an air-tight container.

Add remaining ingredients.

Mix lightly but thoroughly. 

Chill.

 

Salad may be refrigerated for as long as a week in an air-tight container.
